‘Tis the season for warm, delicious slow cooker recipes, am I right? But that doesn’t mean it’s all chicken n dumplings and beef stew – there are some jazzy crock pot recipes out there too. My favorite is Tex-Mex Chicken (seriously could eat Mexican-related food every day). Like many of my recipes, I found this gem on AllRecipes.com.
Ingredients:
1 pound boneless, skinless chicken breasts, cut into 1-inch-wide strips
2 tablespoons taco seasoning mix
2 tablespoons flour
1 green pepper, cut into 1-inch-wide strips
1 red pepper, cut into 1-inch-wide strips
1 cup frozen corn
1 ½ cups chunky salsa
1 cup shredded Mexican cheese
Brown rice
Directions
1. Toss chicken with seasoning and flour in slow cooker. Stir in all remaining ingredients except shredded cheese; cover with lid.
2. Cook on low 6-8 hours.
3. Stir before serving. Top with shredded cheese, serve over rice.

In our quest to introduce you to our little Textie family, we bring you Jess Troskosky, Senior Account Manager, member of the “I Met My Husband/Wife at Text 100” club and mom to two of the cutest, funniest girls in the world (click here for proof!). A long time resident of the High Falls office, Jess is famous for her kind-hearted, fun-loving personality. Take a read below to learn what we mean!
If you had to design a postage stamp, what would you put on it?
Answer: I’m trying to think what my favorite things are! Probably a “rocker.” A rocker is a non-descript person holding an infant. Rockers go to the NICU and help by holding babies because the parents aren’t there. That’s what I want to do for volunteer work. I want to do it because I want more kids, but not everything that comes with them. I want to know that I affected their life.
If you could invite one special guest of honor to your birthday party, who would it be?
Answer: Ellen DeGeneres. She’s super funny and genuine, and she really cares about the zillion-and-one causes she supports, from gay rights to dogs. She has a variety of interests pulling her in multiple directions, kind of like we do, so I feel like we could be best friends.
If you could jump in a swimming pool full of any type of food, what would you choose?
Answer: Chocolate. Milk chocolate, not dark.
There are many technologies that have made life easier, but for me it’s the digital camera (and the girls in front of the camera) that makes my day.


Back when my parents took pictures on their 35mm camera, they would have photos of multiple occasions on a single 36 picture roll of film. They couldn’t preview the picture to ensure they had something mantel worthy. They just had to hope a few would turn out.
However, thanks to digital cameras, I can snap 36 pictures of my daughter blowing out her birthday candles just to be sure I get the best one. It has also allowed me to capture the essence of my girls in what I call, “One My Way, One Your Way.” When trying to get a picture of them in their holiday best or to capture that perfect smile, I’ll ask my girls to give me a smile and pose that is My Way and then they can take a few pictures their way. While the My Way photo gives me a picture I originally envisioned being perfect, their way has captured who they are and the reality of the moment.


So thank you inventor of the digital camera; you’ve made parenting a little easier and with it helped to document life’s silliest (and in MHO best) moments.

We debuted our new friend at today’s Happy Hour, which featured hot eggnog and apple cider cocktails, accompanied by the Mariah Carey classic “All I Want for Christmas is You.”

Back when most of us Texties were wee little nuggets, the world was introduced to a girl by the name of Britney Spears. Little did we know that this person would change pop culture forever. We’ve stuck by her side through thick and thin, through shaved heads and brief marriages (we’ll never forgive her for KFed), and today she turns 30.
Happy Birthday, Brit Brit! Here’s to 30 more years of bad hair extensions, diamond encrusted body suits, and non-stop hits on the radio.
